Umai modern caviar pasta. For the sauce, take chicken stock, parmesan, sherry vinegar, bit of butter and blend it until emulsified. Cook the pasta until al-dente, keep some pasta water and mix with the sauce, cook until pasta is to your preferred texture. You can serve with chive oil (fresh chives blended with rapeseed oil) to give the dish some more flavours. Add Umai Caviar Salt to season the dish and bring out more caviar flavour.
